On regenerative flour, our teams and pride…
Hello pancake friends and family,
With our parks and fields filled with tall grass, weeds and wheat (getting ready for harvest in August), I thought to tell you a bit more about the regenerative flour. This has been the backbone of our batter ever since we did our first pop-up back in 2015.
The main player in our pancake story is Shipton Mills’ regenerative organic no.4 white flour. It’s milled from a blend of English and continental organic wheats, crops rich in protein giving this flour superior baking qualities. We mix this with their regenerative organic buckwheat flour, a naturally gluten-free pseudo-grain, a complete protein containing all the amino acids. Combined together, these flours give the unique flavour and sheer goodness to our batter.
The “goodness” goes way beyond what it does to your gut-health. It extends to our soil and our environment. Regenerative farming has been at the heart of Shipton Mills’ milling tradition and we are really proud to have been part of their journey. Whilst our daily bread is pancakes, our daily fuel is people – our teams. Across our three London restaurants, we truly have the most fabulous people working with us. If I have to choose one word that describes them all, it’s kindness. And true to the essence of hospitality, they are a melting point of nationalities, backgrounds and aspirations, teaching us every day that it’s our differences that make us all the same.
